Sometimes all I need for dinner is a bowl of soup and half of a sandwich. Or a salad. Or something without meat in it. You know, what some people refer to as girly food. Or Cowgirl Food. Or chick food. A few weeks ago a neighbor gave me three beautiful fresh tomatoes from her home garden. I love tomatoes, but my family is pretty so, so about them. I wanted to use them, and give my family a fairly healthy dinner, so I found a recipe for Tomato Pie. Tomato Pie? Yep! It looked so yummy, I had to try it. Go HERE for the recipe, and great photos (not photos I took, those didn't turn out). I thought this was sooo yummy! It would have been so good with a salad with it, or a bowl of soup. If you decide to make it, make sure you follow the directions and get as much liquid out of the tomatoes as possible. My pie ended up a little liquidy (I know, not a real word, but moist is not the right word), but still good. Try it the next time you have a girlfriend over for lunch. As long as she likes tomatoes, it will be a big hit! AND Allison- this might be a good dish to take to that MOMS Club Meeting. You can slice the pie in small slices, so that you can serve everyone. And use some of the tomatoes I am sure you have growing in your garden!

Ironcially our big tomotoes did not turn out well, planted to late, it was too hot. I'm waiting for the cooler weather to start to hopefully get some more. The Cherry tomatoes were great, if I got them before the kids. You know what this sounds yummy. I can't wait to try it.
